Chocolate Chip Kodiak Cake Muffins

These muffins are simple to make. Just need to add a few ingredients to the Kodiak mix and in no time, you’ll have delicious chocolate chip muffins to enjoy. Great for an easy on the go snack or pick me up during the day. They’re made with whole grains and packed with protein. Give them a try!!

Ingredients

  • 2 cup Kodiak pancake mix
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/3 cup Greek yogurt
  • 2/3 cup unsweetened vanilla almond milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tbl maple syrup
  • 1 cup Chocolate Chips

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and spray your muffin pan with a nonstick cooking spray; set it aside.
  2. Add the Kodiak Cakes Power Cakes Mix, baking powder and cinnamon to a large bowl. Add the wet ingredients – Greek yogurt, milk, egg, vanilla and maple syrup into the pancake mix. Stir everything together until just combined.
  3. Fold in the chocolate chips.
  4. Divide the muffin batter evenly in the muffin pan.
  5. Bake for about 20 minutes, or until a toothpick comes out clean.
  6. Allow muffins to cool in the pan for 5 minutes before removing.
