Recipe of the Month: Cottage Cheese Pancakes

These cottage cheese pancakes are high in protein, low in carbs, gluten free and taste delicious! They are easy to make and store very well in the freezer. Once you try them, you will be hooked just like me.

Ingredients

  • 1 tsp coconut oil 
  • ⅓ cup low fat cottage cheese
  • ½ cup rolled oats 
  • 2 eggs
  • Salt to taste

Instructions

  • Mix in a bowl or you can use a blender.
  • Mix all ingredients together until smooth.
  • Add coconut oil to a pan and add batter on low to medium heat.
  • Turn pancake over with a spatula once bubbles start to appear. Cook until both sides are golden brown.

Enjoy with syrup of your choice or even spread nut butter on top with a sliced banana.
