Heart-Healthy Salmon & Spring Greens

For a heart-healthy win that feels like spring on a plate, you can’t beat this easy sheet pan Lemon-Herb Salmon & Spring Greens. Salmon is packed with Omega-3 fatty acids that support cardiovascular health.

Ingredients:

  • 2 Salmon fillets
  • 1 bunch thin asparagus
  • 1 cup halved radishes, (roasting them a few minutes ahead makes them sweeter)
  • 2 tbsp olive oil
  • 1 lemon (sliced into rounds)
  • fresh dill or parsley to taste

Directions:

  1. Preheat your oven to 400°F.
  2. Place the salmon, asparagus, and radishes on a sheet pan lined with parchment paper.
  3. Drizzle with olive oil and a squeeze of lemon. Top the salmon with lemon slices and fresh herbs. Skip the heavy salt and use cracked black pepper or garlic powder to add more flavor.
  4. Bake for 12–15 minutes until the salmon flakes easily with a fork and the veggies are tender.
