Ingredients:
- 2 Salmon fillets
- 1 bunch thin asparagus
- 1 cup halved radishes, (roasting them a few minutes ahead makes them sweeter)
- 2 tbsp olive oil
- 1 lemon (sliced into rounds)
- fresh dill or parsley to taste
Directions:
- Preheat your oven to 400°F.
- Place the salmon, asparagus, and radishes on a sheet pan lined with parchment paper.
- Drizzle with olive oil and a squeeze of lemon. Top the salmon with lemon slices and fresh herbs. Skip the heavy salt and use cracked black pepper or garlic powder to add more flavor.
- Bake for 12–15 minutes until the salmon flakes easily with a fork and the veggies are tender.
