Recipe of the Month: Grilled Shrimp Skewers

These grilled shrimp skewers deserve a place at your Memorial Day cookout. Marinated in a yummy lemon and garlic mixture, they’re packed with flavor. Plus, they come together in a snap making them the perfect addition to any grilled menu.

15-20 minutes is all the time you will need to prepare them!

Ingredients

  • 2 lb. extra-large shrimp
  • Zest and juice of 1 lemon
  • 3 garlic cloves, peeled and chopped
  • 1/4 c. olive oil 
  • 1 tsp. kosher salt
  • 1/4 tsp. ground black pepper
  • 1/4 tsp. crushed red pepper flakes

Directions

  • Peel the shells and tails from shrimp and clean.
  • Combine the lemon juice, garlic, olive oil, salt, black pepper and crushed red pepper in a large bowl. Add the cleaned shrimp and toss well to coat. Cover and refrigerate for 15 minutes. 
  • Remove the shrimp from the mixture and add 5 pieces to each skewer. Place the skewers on the grill over direct heat. Cook until the shrimp are pink all over, about 2 to 3 minutes per side. Remove from the heat.
