Pumpkin Spice Oat Muffins

Ingredients:

1 cup canned pumpkin purée
2 large eggs
1/3 cup honey or maple syrup
1 1/2 cups rolled oats
1 tsp pumpkin pie spice (or cinnamon + nutmeg + cloves blend)
Optional: 1/4 cup chopped nuts or chocolate chips

Directions:

  1. Preheat oven to 350°F and line a muffin tin with paper liners.
  2. In a bowl, whisk together pumpkin purée, eggs, and honey/maple syrup until smooth.
  3. Stir in oats and pumpkin spice until well combined. If using nuts or chocolate chips, fold them in.
  4. Divide batter evenly into muffin cups (about 3/4 full).
