June brings warmer weather, longer evenings, and an abundance of vibrant produce. To keep you out of a hot kitchen, try this sweet corn dish as part of your summer cooking, or should I say, it requires absolutely no cooking if you use sweet, tender fresh corn right off the cob.
Ingredients:
- 4 ears of fresh corn (kernels removed)
- 1 cup halved cherry tomatoes
- 1 diced English cucumber
- 1/4 cup crumbled feta cheese
- 2 tablespoons of extra virgin olive oil mixed with one lime, juiced
Instructions:
Toss all the chopped vegetables together in a large serving bowl. Drizzle the olive oil and lime juice dressing over the top, season generously with salt and pepper, and gently fold in the crumbled feta cheese just before serving.
