I love zucchini in the summer. It’s the easiest summer side dish to make and is in season to buy for a great price! I live in New Jersey, so tomatoes are delicious this time of year!
Ingredients:
- 2 medium zucchinis sliced thin
- 4 tomatoes diced
- 1 onion sliced
- 2 tbsp butter
- 2 tbsp brown sugar
- 2 tsp Italian seasoning
- salt & pepper
Directions:
- In a pan, melt butter, and cook the onions until translucent and soft.
- Add in the zucchini and cook for about 5 minutes.
- Add the tomatoes, remaining ingredients and continue to cook until the liquid evaporates, about 15 minutes.
- Serve hot.
I am surprised you have a salad that contains tomatoes on the MS site. Tomatoes are nightshades and NOT recommended for those with autoimmune disorders.
