Zucchini, Tomatoes, and Onions

I love zucchini in the summer.   It’s the easiest summer side dish to make and is in season to buy for a great price!  I live in New Jersey, so tomatoes are delicious this time of year!


  • 2 medium zucchinis sliced thin
  • 4 tomatoes diced
  • 1 onion sliced
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 2 tsp Italian seasoning
  • salt & pepper


  1. In a pan, melt butter, and cook the onions until translucent and soft.
  2. Add in the zucchini and cook for about 5 minutes.
  3. Add the tomatoes, remaining ingredients and continue to cook until the liquid evaporates, about 15 minutes.
  4. Serve hot.

    I am surprised you have a salad that contains tomatoes on the MS site. Tomatoes are nightshades and NOT recommended for those with autoimmune disorders.
