Homemade Valentine’s Day Marshmallows

With Valentine’s Day around the corner, these sweet treats will be sure to spread a little love. Great to share with friends, family or even just for you to enjoy. Add them to hot chocolate, coffee, or you can eat them simply on their own.

Ingredients:

1 cup cold water
3 packets unflavored gelatin
1 1/2 cups granulated sugar
1 cup light corn syrup
1/4 tsp. kosher salt
1 tbsp. pure vanilla extract
1/2 cup confectioners’ sugar
1/4 cup cornstarch

Directions:

  1. Place 1/2 cup cold water in the bowl of a stand mixer- add in 3 packets of unflavored gelatin, stir gently and let sit while you move on to step 2.
  2. In a 2-quart saucepan, combine 1 1/2 cups granulated sugar, 1 cup corn syrup, 1/2 cup water and 1/4 teaspoon of kosher salt. Cook on medium-high to 240°F on a candy thermometer, about 8-12 minutes. Remove from heat and move to step 3.
  3. With mixer on low speed, carefully drizzle sugar syrup mixture into gelatin. Beat on high for about 15 minutes. Should be very thick. Add in vanilla extract and move to step 4.
  4. In a medium bowl, whisk together 1/2 cup of confectioners’ sugar and 1/4 cup of cornstarch. Line a 13″ by 9″ baking pan with parchment, dust heavily with cornstarch mixture. Transfer marshmallow mixture to prepared pan, spreading evenly with a greased spatula, . Dust entire top with remaining cornstarch mixture. Let stand for 6 hours or until firm.
  5. Peel edges of parchment from marshmallow and cut into sizes you prefer.
  6. Store in airtight container.
